Effects of ultrasound synergized with microwave on structure and functional properties of transglutaminase-crosslinked whey protein isolate

Summary: In this study, different pretreatment methods including ultrasound, microwave heating, and ultrasound synergized with microwave heating were applied to investigate the influence on structure, physicochemical, and functional characteristic of transglutaminase-induced whey protein isolate (WPI). The results showed that microwave heating had the strongest effect on the structure and functional characteristics of WPI, leading to improved emulsion stability and foaming stability.

SY has a higher binding affinity for alpha-LA at higher temperatures, and the binding constant increases with temperature. Hydrophobic force and hydrogen bond play major roles in the interaction between alpha-LA and SY. Increasing the microwave heating temperature can promote the digestibility and antioxidant capacities of the alpha-LA-SY complex.

Glycosylated whey protein isolate enhances digestion behaviors and stabilities of conjugated linoleic acid oil in water emulsions
