Glycosidically bound aroma precursors in fruits: A comprehensive review

Isolation and Characterization of High-Ethanol-Tolerance Lactic Acid Bacteria from Australian Wine

Summary: Lactic acid bacteria play an important role in winemaking. This study isolated 108 lactic acid bacteria from high-ethanol-content Grenache wines and identified them using molecular biology techniques. Among them, most were Oenococcus oeni, and some strains showed good tolerance to high ethanol levels, making them potential candidates for initiating malolactic fermentation in high-ethanol-content wines.

Summary: This study isolated 13 lactic acid bacteria strains from pickle and cured meat, with L. plantarum CKXP13 and L. plantarum CWXP24 showing potential biocontrol activity against citrus green mold. Antifungal activity of these strains may be attributed to organic acids, hydrogen peroxide, and proteinaceous compounds. Genome data mining revealed presence of bacteriocin encoding genes in these strains, indicating their potential as biocontrol agents.
