Evaluation of quality changes in big-eye tuna (Thunnus obesus) based on near-infrared reflectance spectroscopy (NIRS) and low field nuclear magnetic resonance (LF-NMR)

Summary: The study investigated the effect of temperature fluctuations on the quality of big-eye tuna through simulation of logistical processes. Results showed that WHC dropped significantly in the L2 group and protein degradation accelerated with temperature increase. The study provided a theoretical foundation for the application of NIRS and LF-NMR in aquatic products.

The Effect of Lyophilized Coconut Mesocarp - Aqueous and Ethanol Phenolic Extracts on the Gel Quality of Tilapia Surimi

Summary: The study found that both aqueous and ethanol extracts of coconut husk contain various phenolic compounds, which affect the gel properties of tilapia surimi. Optimal levels of aqueous and ethanol extracts can significantly improve the gel strength and texture, but higher concentrations of the extracts have a negative impact. Ultimately, at the right ratio, coconut husk extracts can enhance the quality of freshwater fish surimi gel.

The inhibition of cell-free supernatants of several lactic acid bacteria on the selected psychrophilic spoilage bacteria in liquid whole egg

Summary: The short shelf-life of pasteurized liquid whole egg has been a technical problem in the industry. This study investigated the spoilage potential of selected strains and the inhibition of lactic acid bacteria's cell-free supernatant on representative strains with strong spoilage ability. The results showed that high abundance strains like Pseudomonas and Microbacterium had strong spoilage ability, but the cell-free supernatant of selected LAB had a good inhibitory effect on them, especially the CFS of Lactobacillus plantarum 90.

Resource Status and Effect of Long-Term Stock Enhancement of Large Yellow Croaker in China

Summary: The large yellow croaker, once the most abundant marine fish in China, saw a severe decline in its wild population in the 1970s due to overexploitation. Since 2000, hatchery release has been carried out to enhance the stock. Genetic analysis revealed no genetic differentiation in the entire wild population, allowing for flexibility in mixing farmed and wild populations. However, the study highlighted the potential negative effects of releasing farmed juveniles into the wild, including domestication and increased genetic loads.
