Effects of water deficit and high N fertilization on wheat storage protein synthesis, gluten secondary structure, and breadmaking quality

Junxian Liu et al.

Summary: This study investigated the effects of water deficit and high N-fertilizer application on wheat storage protein synthesis, gluten secondary structure, and breadmaking quality. The results showed that these treatments promoted the accumulation of storage proteins and gluten macropolymer, improved protein secondary structure formation and lipid accumulation, and reduced flour moisture. These changes led to improved dough rheological properties and breadmaking quality.

Impact and mechanism of sulphur-deficiency on modern wheat farming nitrogen-related sustainability and gliadin content

Zitong Yu et al.

Summary: The study demonstrates that sulfur fertilization can enhance nitrogen-use efficiency in wheat crops and reduce the amount of gliadin proteins, suggesting a relationship between soil sulfur levels and wheat-induced human pathologies. The research highlights the impact of sulfur deficiency on both productivity and population health in modern farming systems.

Identification of characteristic proteins of wheat varieties used to commercially produce dried noodles by electrophoresis and proteomics analysis

Shuang Li et al.

Summary: By utilizing various electrophoresis and mass spectrometry analyses, characteristic proteins of wheat varieties used for commercial production of dried noodles were identified, and the textural properties of noodles were evaluated. The study revealed that specific glutenin subunits and other proteins may play a role in determining the quality of noodles.

Combined effects of wheat gluten and carboxymethylcellulose on dough rheological behaviours and gluten network of potato-wheat flour-based bread

Xiaohui Hu et al.

Summary: Adding wheat gluten and carboxymethylcellulose (CMC) to potato-wheat composite flour improved dough machinability and bread quality. The combination led to a more branched and compact gluten network, enhancing gas retention capacity and dough stability, mimicking the machinability properties of wheat flour dough. Bread quality significantly improved, with specific volume increasing by 42.86% and hardness reducing by 75.93% when using 4% gluten and 6% CMC.

Influence of new sulfur-containing fertilizers on performance of wheat yield

Meruyert Kurmanbayeva et al.

Summary: This study evaluated the impact of new sulfur-containing fertilizers on wheat growth and yield, as well as investigated wheat varieties' resistance to Puccinia triticina Erikss. It was found that powdered and dissolved sulfur-containing fertilizers can improve wheat ripeness and productivity, while the Omskaya 29 variety showed immune response to brown rust and contained four resistance genes. The new sulfur-containing product is recommended for enhancing wheat productivity, with Omskaya 29 variety as a valuable breeding material resistant to brown rust.

Effects of phosphorus and sulfur on yield and nutrient uptake of wheat (Triticum aestivum L.) on Vertisols, North Central, Ethiopia

Shawl Assefa et al.

Summary: The deficiency of phosphorus and sulfur in Ethiopian soils has been increasingly reported. Wheat shows a significant response to interactive application of phosphorus and sulfur, with the combination of 22 kg P and 15 kg S per hectare resulting in the highest grain yield. Further research on different combinations of P and S in various agroecologies is recommended to confirm results and study the long-term effects.
