Characterization of Four Rearing Managements and Their Influence on Carcass and Meat Qualities in Charolais Heifers

Summary: The aim of this study was to investigate the effects of rearing management on carcass and meat properties. The results showed that different rearing managements could achieve the same quality of carcass or meat. Management 3 was found to be an interesting trade-off for managing both carcass and LM meat quality.

What is the impact of the rearing management applied during the heifers' whole life on the toughness of five raw rib muscles in relation with carcass traits?

Summary: This study analyzed the effects of rearing managements, carcass traits, and muscle type on the toughness of raw meat, and developed prediction models. The infraspinatus muscle was found to be the toughest and most sensitive to changes in rearing management, while the other four muscles had similar toughness within the same rearing management. The study also found that the tenderness of the muscles decreased when the carcass was heavier and had higher dressing percentage and conformation, with the models explaining about 40% of the observed variability.
