High moisture extrusion of pea protein: Effect of L-cysteine on product properties and the process forming a fibrous structure

Summary: This study investigated the effect of L-cysteine addition on the functional and structural properties of texturized pea protein. The results showed that L-cysteine significantly affected the texture and fiber structure of the protein. The hydrophobic group of pea protein was exposed during high-moisture extrusion, leading to a decrease in water holding capacity but an increase in oil holding capacity and nitrogen solubility index.
