This apparent paradox is due to the pro-oxidant and/or electrophilic character of the oxidation-derived metabolites, which activate the cell's endogenous antioxidant capacity or prevent the activation of pro-oxidant pathways.

The results showed that the lactic acid-based NADES had the highest total phenolic content and antioxidant activity, while the urea-based NADES had the highest antiradical potential.

Influence of In Vitro Gastric Digestion of Olive Leaf Extracts on Their Bioactive Properties against H. pylori

Summary: This study evaluated the changes in chemical composition and bioactive properties of two olive leaf extracts during in vitro gastric digestion, and analyzed their antibacterial, anti-inflammatory, and antioxidant capabilities. The results showed that gastric digestion affected the chemical composition and bioactivity of both extracts, with a significant decrease in antioxidant properties for extract E1 and an increase in anti-inflammatory and antioxidant activity for extract E2. However, both extracts experienced a decrease in antibacterial activity. The pH of gastric digestion had a minor impact on the composition and bioactivity of the extracts.
