Synergic Antioxidant Effects of the Essential Oil Component γ-Terpinene on High-Temperature Oil Oxidation

Gamma-terpinene enhanced the protecting activity of alpha-tocopherol and its analogues, but had no effect on other antioxidants. Mechanistic studies showed that gamma-terpinene generated hydroperoxyl radicals, which were responsible for reducing tocopheroxyl radicals.
