Spoilage Bacteria Counts on Broiler Meat at Different Stages of Commercial Poultry Processing Plants That Use Peracetic Acid

Summary: This study aimed to evaluate the efficacy of antimicrobial interventions on spoilage microbes on broiler meat. The results showed that the most effective intervention occurred during carcass chilling, but there may be cross contamination issues during the second processing stage.
