Insight into the antibacterial activity of lauric arginate against Escherichia coli O157:H7: Membrane disruption and oxidative stress

Dianbo Zhao et al.

Summary: This study reveals the antibacterial mechanism of lauric arginate (LAE) against Escherichia coli. LAE damages the cytoplasmic and outer membranes of E. coli, causing a loss of membrane integrity. It also induces oxidative stress and increases reactive oxygen species levels. The combination of membrane damage and oxidative stress contributes to the antibacterial activity of LAE.

Antibacterial characteristics of oregano essential oil and its mechanisms against Escherichia coli O157:H7

Bo Li et al.

Summary: The present study investigated the antimicrobial property of oregano essential oil (OEO) against Escherichia coli O157:H7. The results showed that OEO exhibited antibacterial activity with minimum inhibition concentration (MIC) of 0.156 μL/mL. OEO caused damages to cell structures, permeabilized cellular membranes, induced depolarization of membrane potential and oxidative stress, resulting in bactericidal effects. Therefore, OEO has potential application as a natural antibacterial agent in the food industry.

Application of plasma-activated water (PAW) for mitigating methicillin-resistant Staphylococcus aureus (MRSA) on cooked chicken surface

Jun Wang et al.

Summary: The study investigated the use of PAW for inactivating MRSA and MSSA on cooked chicken breast, exploring factors such as immersion times, treatment sequence, agitation, and plasma-activated times. Results showed that PAW could effectively reduce the bacteria on the meat surface, with better inactivation effects on MSSA compared to MRSA under various treatment conditions. This suggests PAW as a potential alternative disinfectant to ensure food safety and combat antibiotic resistance in the food chain.

Synergistic antimicrobial activity of plasma-activated water and propylparaben: Mechanism and applications for fresh produce sanitation

Xiao Liu et al.

Summary: Plasma-activated water (PAW) shows synergistic antimicrobial activity with propylparaben (PP), achieving a significant reduction in Escherichia coli cells. The combination treatment causes morphological changes, increased reactive oxygen species levels, and disruption of bacterial membrane potential, indicating a potential primary target for their antibacterial action. The simultaneous treatment of PAW and PP on fresh produce ensures microbial safety without affecting quality characteristics.
