Characteristics and Mechanism of Crayfish Myofibril Protein Gel Deterioration Induced by Autoclaving

Summary: This study investigated the deterioration of crayfish myofibril protein (CMP) gel induced by autoclaving. It was found that the texture of CMP gel weakened, hydrophobic interaction and protein aggregation decreased, and the amount of moderately bound water in the gel decreased when autoclaving was above 105 degrees C/0.103 MPa. The microstructure of CMP gel also showed enlarged pores and degradation of myosin heavy chain (MHC) after heating for 30 minutes at above 105 degrees C/0.103 MPa.

In addition to solo assembly, soy proteins can also co-assemble with polysaccharides to form versatile nano-architectures. Recent progress shows that assembled soy protein nano-architectures are being developed as nanovehicles for hydrophobic nutraceuticals.
