Ultrasound-modified interfacial properties and crystallization behavior of aerated emulsions fabricated with pH-shifting treated pea protein

Summary: The interfacial properties of pea protein isolate were modified by pH12-shifting and ultrasound treatment as a substitute for skimmed milk powder in ice cream. The modified emulsion displayed superior stability and promoted fat crystallization for improved final product stability.

Physicochemical and sensory properties of ice cream prepared using sweet lupin and soymilk as alternatives to cow milk

Summary: Sweet lupine and soybean have high potential as functional foods due to their rich protein content and low levels of fat. This study investigated the effect of substituting sweet lupine and soymilk in vanilla-flavored ice cream and found that it affected the physicochemical and sensory properties of the ice cream. However, within certain levels of substitution, the taste and texture of the ice cream were similar to cow milk ice cream, making sweet lupine and soymilk a good alternative to cow milk in ice cream production.

The results showed that ultrasound treatment decreased particle size and stabilizers had an impact on particle size as well. This review highlights the critical findings and recent studies on the application of FTIR spectroscopy integrated with chemometric tools for adulteration detection in edible oils.

However, at 75% amplitude, pH, syneresis, and flavor decrease, while acidity, adhesiveness, cohesiveness, springiness, chewiness, redness, yellowness, and overall acceptance increase.
