Comparative Chemical Profiling of Underexploited Arctostaphylos uva-ursi L. Herbal Dust Extracts Obtained by Conventional, Ultrasound-Assisted and Subcritical Water Extractions

Summary: This study evaluated the influence of ultrasound-assisted extraction (UAE) parameters on the yield of phenolic compounds from A. uva-ursi herbal dust and compared the extraction efficiency with solid-liquid (SLE) and subcritical water extraction (SWE). The results showed that extraction temperature had a major influence on the phenolic compound yield, and UAE resulted in higher content of arbutin, rutin and hyperoside compared to SLE and SWE.

The fruits of sumac (Rhus coriaria L.) as a functional additive and salt replacement to wheat bread

Summary: The study investigated the physical, sensory, and antioxidant properties of wheat bread enriched with sumac flour (SF) under different salt conditions. The addition of SF led to a decrease in bread volume, an increase in crumb hardness, and an enrichment of phenolic compounds in the bread. Salt reduction did not negatively impact these properties, and the addition of SF should not exceed 3 g/100 g for optimal bread quality.

Summary: The addition of Saskatoon powder increased phenolics content and improved antioxidative properties of wheat bread. Microencapsulated additives enhanced the antioxidative properties and bioaccessibility of the breads. The breads enriched with microencapsulated powders showed the highest inhibition of activities of enzymes such as cyclooxygenase and glucosidase.
