High-Yield Production of a Rich-in-Hydroxytyrosol Extract from Olive (Olea europaea) Leaves

Summary: The aim of this study was to explore high-yield production of hydroxytyrosol, a phenolic compound with high antioxidant capacity. Olive leaves were chosen as the feedstock due to their significant oleuropein content. Various techniques were used, including drying, mechanical pretreatment, solid-liquid extraction, hydrolysis, and extraction with ethyl acetate. The hydroxytyrosol content was significantly increased through these steps.
