Effects of ultrasound on the degradation kinetics, physicochemical properties and prebiotic activity of Flammulina velutipes polysaccharide

Summary: This study investigated the ultrasonic degradation process, physicochemical properties, and prebiotic activity of ultrasonic degraded Flammulina velutipes polysaccharides (U-FVPs). The results showed that increasing ultrasonic intensity led to faster degradation, and reducing polysaccharide concentration contributed to degradation. Ultrasound changed the solution conformation and stability of the polysaccharide, resulting in decreased viscosity and gel strength but improved thermal stability. U-FVPs exhibited better prebiotic activity compared to the original polysaccharides.

Citrus pectin modified by microfluidization and ultrasonication: Improved emulsifying and encapsulation properties

Summary: The modified pectin treated with a combination of microfluidization and moderate ultrasonication (MUB) showed the lowest hydrodynamic diameter, molecular weight, and polydispersity, with relatively low apparent viscosity and significantly higher DPPH radical scavenging capacity. MUB also exhibited improved emulsifying and encapsulation properties compared to the original and ultrasonication treated pectin.

Ultrasonication enhanced the multi-scale structural characteristics of rice starch following short-chain fatty acids acylation

Summary: This study investigated the impact of ultrasonication on the reaction efficiency of rice starch acylation from three short-chain fatty acids, revealing that lower power density ultrasonication can improve acetylation efficiency but reduce propionylation reactivity, while butyrylation efficiency is significantly enhanced. The ultrasonic-assisted SCFAs-modified rice starch showed lower peak viscosity and setback value, suggesting avoidance of starch molecules rearrangement, and destroyed gel textural property. These findings highlight the importance of appropriate ultrasonication for enhancing acylation efficiency and improving starch rheological property.

Anti-glycation effect of Ecklonia cava polysaccharides extracted by combined ultrasound and enzyme-assisted extraction

Summary: The study examined the anti-glycation effects of polysaccharides extracted from Ecklonia cava using different methods such as hot buffer, ultrasound, enzyme, or a combination of ultrasound and enzyme. Results showed that the polysaccharides with higher fucose and galactose compositions, as well as higher sulfate contents, had better inhibition effects on AGE formation. Specifically, the combination of ultrasound and enzyme extraction method showed the highest extraction yield and lowest protein and uronic acid contents, making it a suitable method for obtaining anti-glycation agents from E. cava.
