Effects of phenolic acids and quercetin-3-O-rutinoside on the bitterness and astringency of green tea infusion

Summary: Phenolic acids are important components in green tea and are positively correlated with the bitterness and astringency of the tea infusion. They can increase the bitterness of epigallocatechin gallate (EGCG) while behaving differently for astringency. Gallic acid enhances astringency at all concentrations, while caffeic acid, chlorogenic acid, and Que-rut have dual effects on astringency, inhibiting at lower concentrations but enhancing at higher ones. Phenolic acids and Que-rut synergistically interact with tea infusion, and as their concentration increases, the synergistic enhancement of bitterness and astringency also increases.
