A novel approach for resistant starch production from green banana flour using amylopullulanase

Mohan Das et al.

Summary: The focus of the study was on increasing the resistant starch content in green banana flour through enzymatic intervention using amylopullulanase. Optimization experiments were conducted to determine the optimum conditions for maximum increment of RS%, resulting in a significant increase in the resistant starch content of the flour samples after enzymatic treatment.

Multi-scale structure, rheological and digestive properties of starch isolated from highland barley kernels subjected to different thermal treatments

Haoran Wang et al.

Summary: This study investigated the effects of different thermal treatments on highland barley starch, focusing on the impact of superheated steam treatment. The results showed that superheated steam treatment caused changes in the molecular weight and structure of the starch, leading to enhanced thermal stability and weaker gel structures. Additionally, there was an increase in resistant starch content when compared to other thermal treatments. The most significant changes in the structure and properties of the starch were observed under superheated steam treatment at 180 degrees Celsius.

Insights into the structure and conformation of potato resistant starch (type 2) using asymmetrical flow field-flow fractionation coupled with multiple detectors

Wenhui Zhang et al.

Summary: Insight into the structure and conformation characteristics of starch that influence its enzyme susceptibility is important for potential applications. In this study, AF4-MALS-dRI was evaluated for monitoring changes in the structure and conformation of potato starch during enzymatic hydrolysis, providing insights into the molecular-level conformation of potato resistant starch. Results indicated that gelatinization process altered the conformation of potato amylose molecules, potentially accelerating enzymatic hydrolysis. An intermediate with elongated branched conformation was also observed, which may play a role in the digestion properties of potato starch. AF4-MALS-dRI is shown to be a powerful tool for understanding the conformation of PRS.

Applications of asymmetrical flow field-flow fractionation for separation and characterization of polysaccharides: A review

Xue Chen et al.

Summary: Polysaccharides are abundant natural biopolymers widely used in various fields. Asymmetrical flow field-flow fractionation (AF4) has been utilized for separation and characterization of polysaccharides due to its ability to reduce the risk of shear degradation. AF4 has been effectively applied in separating and characterizing polysaccharides from different sources in the past decade.

Effects of microwave treatments and retrogradation on molecular crystalline structure and in vitro digestibility of debranched mung-bean starches

Nguyen Thi Mai Huong et al.

Summary: The study investigated morphology, molecular crystalline structure, and digestibility of debranched mung bean starches with or without microwave treatment and retrogradation at different temperatures. The results showed that microwave treatment and further crystallization significantly improved the crystalline structure of starch granules, leading to higher resistant starch content and enhanced resistance to enzyme digestion.

Physicochemical, rheological and digestibility characterization of starch extracted from the marine green macroalga Ulva ohnoi

Meital Kazir et al.

Summary: Ulva starch has higher amylose content and hydration capacity, lower molecular weight, and exhibits superior gel properties with lower digestibility compared to rice and potato starches. This makes Ulva starch a unique and promising ingredient for developing new functional foods, with potential benefits for tackling obesity and diabetes.
