Development of a dose-response model for porcine cysticercosis

Daniel A. Andrade-Mogrovejo et al.

Summary: This study systematically reviewed and analyzed pig infection experiments to evaluate the accuracy of dose-response models for Taenia solium cyst development. The exact beta-Poisson model was found to be the best fit for the data, providing important parameters for future experimental infections and transmission simulation models.

Pecan color change during storage: Kinetics and Modeling of the Processes

Himanshu Prabhakar et al.

Summary: Postharvest changes in pecan nutmeat color are influenced by factors such as temperature, relative humidity, and storage time. This study developed kinetic models to describe the color changes of pecan nutmeats during storage. The results showed significant effects of temperature, relative humidity, and storage time on color degradation. The breakdown of flavonoids and reaction products from Maillard browning may contribute to the formation of the reddish-brown color observed in degraded nutmeats. The developed models can be used to predict color change and aid pecan growers, processors, and researchers.

A comprehensive study of raw and roasted macadamia nuts: Lipid profile, physicochemical, nutritional, and sensory properties

Xing-Hao Tu et al.

Summary: Roasting macadamia nuts led to only small changes in fatty acid and triglyceride content, but increased free fatty acid content and peroxide value. The total available polyphenol content and oxidative stability of kernels increased significantly after roasting, as did the sensory scores for taste and aroma. Overall, the roasted macadamia nuts showed great improvements in sensory quality, nutritional value, and oxidative stability compared to raw nuts.

Lourdes Melisa Rabago-Panduro et al.

Summary: Pulsed electric fields (PEF) have been found to not increase the total oil extraction yield (OEYTOTAL) in dry pecan nuts, with moisture, oil content, and microstructure playing a key role in the effectiveness of PEF.
