Encapsulation of curcumin in ZEIN-HTCC complexes: Physicochemical characterization, in vitro sustained release behavior and encapsulation mechanism

Gerui Ren et al.

Summary: The encapsulation of curcumin (CUR) in ZEIN-N-(2-hydroxy) propyl-3-trimethylammonium chitosan chloride (HTCC) complexes using antisolvent precipitation (ASP) method improved its stability and water solubility, achieving sustained release. The complexes exhibited good redispersibility and controlled release behavior, fitting into the Higuchi model. Results showed that hydrophobic interaction, hydrogen bonding, and electrostatic interactions were driving forces for complex formation, with the encapsulated CUR in an amorphous state.

Impact of different crosslinking agents on functional properties of curcumin-loaded gliadin-chitosan composite nanoparticles

Shufang Yang et al.

Summary: This study investigated the impact of different crosslinking agents on the functional properties of gliadin-chitosan composite nanoparticles for curcumin delivery. The addition of chitosan increased the encapsulation efficiency of curcumin in the nanoparticles, with sodium tripolyphosphate showing the highest efficiency. Different crosslinking agents had varying effects on the properties of the composite nanoparticles, with phytic acid and sodium phytate modification providing better thermal and UV light stability.

Mung bean protein as a promising biopolymeric vehicle for loading of curcumin: Structural characterization, antioxidant properties, and in vitro release kinetics

Mehdi Mohammadian et al.

Summary: Mung bean protein was used to load curcumin through conventional and pH-shifting methods, with the latter showing higher encapsulation efficiency; hydrophobic interactions and hydrogen bonding between curcumin and mung bean proteins were confirmed through fluorescence spectroscopy and Fourier transform infra-red analysis; XRD and DSC analysis indicated a decrease in curcumin crystallinity and predicted release mechanisms as non-Fickian diffusion or super case II transport relaxation release.

Curcumin extracts from Curcuma Longa - Improvement of concentration, purity, and stability in food-approved and water-soluble surfactant-free microemulsions

Pierre Degot et al.

Summary: Curcumin was extracted from Curcuma Longa using a surfactant-free microemulsion, producing highly concentrated tinctures of up to 130 mg/mL curcuminoids. Water content influenced the extraction process and the purity of the extracts, with additional purification steps enhancing purity to 94%. Purification before extraction allowed for indefinite solubilization of water insoluble curcumin extracts in aqueous environments, with stability of the solutions for up to five months when kept away from natural light.

Effects of covalent interactions and gel characteristics on soy protein-tannic acid conjugates prepared under alkaline conditions

Yang Guo et al.

Summary: Covalent cross-linking of soy protein isolate (SPI-12%) with tannic acid (TA-29,58,88,117,146 mu mol/g SPI) in an alkaline environment was found to improve the structure, antioxidant activity, and gelation characteristics of SPI-TA conjugates. The addition of TA initiated irreversible SPI modifications, resulting in optimal hardness and elasticity at pH 11, and increased storage and loss moduli with higher TA concentrations. Analysis shows that higher TA concentration leads to a more compact network structure, indicating pH-dependent interactions between SPI and TA modify gel formation to enhance rheological and textural properties of the gels.

Encapsulation of curcumin using Grass pea (Lathyrus sativus) protein isolate/Alyssum homolocarpum seed gum complex nanoparticles

Mohammad Ghobadi et al.

Summary: Grass pea protein isolate (GPPI)/Alyssum homolocarpum seed gum (AHSG) complex nanoparticles were used as a wall material for encapsulation of Curcumin. Two fabrication methods were compared, with Type 2 capsules showing higher encapsulation efficiency and loading capacity for Cur. The major driving forces for particle formation and Cur encapsulation were found to be hydrogen bonding, electrostatic attraction, and hydrophobic interaction. Encapsulated Cur showed improved antioxidant activity, light and thermal stability, and delayed release under in-vitro gastrointestinal conditions.
