Effects of micellar casein concentrate purity and milk fat on sulfur/eggy flavor in ultrapasteurized milk-based beverages

Summary: The study aimed to determine the removal level of milk-derived whey protein (MDWP) needed to eliminate sulfur/eggy flavor in fat-free micellar casein concentrate (MCC) beverages. It was found that the purity of MCC and the fat content in the beverages had an impact on flavor. Increasing MCC purity had a greater effect in reducing sulfur/eggy flavor compared to increasing milk fat content.

Microfiltration shows promise in improving efficiency and quality in dairy production, particularly in cheese making. Short communication: Effect of pH on the heat stability of reconstituted reduced calcium milk protein concentrate dispersions

Summary: This study aimed to investigate the heat stability of dispersions from reconstituted reduced-calcium milk protein concentrate (RCMPC) with 80% protein or more. The results showed that heat stability decreased with calcium reduction, and was negatively correlated with calcium ion activity in the dispersions. Heat stability of dispersions varied at different pH values, with CO2 injection improving heat stability in high protein formulation beverages.

Ready-to-drink protein beverages: Effects of milk protein concentration and type on flavor

Summary: This study investigated the impact of protein concentration and milk protein ingredients on sensory properties of vanilla ready-to-drink protein beverages. Higher protein content led to increased astringency and sensory viscosity, while decreasing vanillin flavor. Beverages with higher serum protein content tended to have higher sulfur volatiles and lower vanillin concentrations.

Correlations between the solubility and surface characteristics of milk protein concentrate powder particles

Summary: The solubility of high-protein milk protein concentrate (MPC) may decrease significantly during storage, especially at higher temperatures and humidity levels. This study found that the fusion of casein micelles at MPC powder particle surfaces could be a causative factor for the solubility loss, and inhibiting the formation of crusts on the particle surfaces may alleviate solubility loss.
