The Investigation of Protein Profile and Meat Quality in Bovine Longissimus thoracic Frozen under Different Temperatures by Data-Independent Acquisition (DIA) Strategy

Summary: This study investigated the influence of freezing on the protein profile and quality traits in bovine Longissimus thoracic muscle using the data-independent acquisition technique. The results showed significant changes in protein abundance, with structure proteins and enzymes being the most affected. Freezing at -12 and -18 degrees Celsius had a greater impact on the muscle proteome compared to -38 and -80 degrees Celsius, which is in line with the deterioration trend of meat quality. Several proteins were found to be closely correlated with color, shear force, thawing loss, and cooking loss in frozen meat, suggesting their potential as biomarkers for quality assessment. Newly discovered proteins MYO18A and ME3 were associated with frozen beef quality. Additionally, CTTN and SERPINB6 were identified as proteins inversely correlated with thawing loss. These findings provide insights into the molecular-level changes induced by freezing and offer potential strategies for quality control.

New insights into the mechanism of freeze-induced damage based on ice crystal morphology and exudate proteomics

A total of 506 differentially expressed proteins were identified, with nine proteins significantly correlated with quality characteristics and most proteins involved in binding, metabolic enzymes, and protein turnover. These findings provide insights into the proteome changes and mechanisms of quality decline in PNVN muscles during low-temperature storage.
