It was found that tannic acid significantly improved the wettability of ovalbumin, resulting in better interfacial stability. HIPEs formed at pH 4.0 exhibited stronger gel network and higher viscosity, and showed good storage and freeze-thaw stability.

Preparation of high internal phase Pickering emulsions stabilized by egg yolk high density lipoprotein: Stabilizing mechanism under different pH values and protein concentrations
