Water distribution and mobility in the gel system changed significantly with increasing PEF intensity, with an increase in immobilized water and a decrease in free water. Molecular dynamics simulations showed an increase in hydrogen bonds and reduction in radius of gyration after PEF treatment.

Denaturation temperatures and enthalpies of both SPI and CAS samples decreased after MEF treatments.

Gel electrophoresis revealed lower actin and myosin heavy chain band intensities in MPI treated with IB-DBD-HVCP, particularly with longer treatment times, while gels made from DBD-HVCP5 exhibited higher breaking force, deformation, and G' value.
