Effect of plasticizer and zein subunit on rheology and texture of zein network

Xinrui Zhang et al.

Summary: Zein can form a viscoelastic network similar to gluten, improving the texture of gluten-free foods. Plasticizer and zein subunits influence the network's viscoelasticity, with acetic acid maintaining elasticity better than ethanol. The presence of β- and γ-zein increases yield strain and cohesive force, transitioning zein to a more ordered network.

Assessing the Condition of Complex Poly-Material Artworks by Py-GC-MS: The Study of Cellulose Acetate-Based Animation Cels

Francesca Caterina Izzo et al.

Summary: This research analyzes the material composition of hand-painted animation cels made for Italian television in the 1950s and 1960s. The cels are found to be made of plasticized cellulose acetate and decorated with alkyd paint. The condition of the cels is generally poor, with issues such as yellowing, exudation, warping, and cracking. The migration of plasticizers from the cellulose acetate support into the paint layers has caused softening and adherence of the cels. The presence of bis(2-methoxyethyl) phthalate and triphenyl phosphate in the plasticizers is found to be related to the degradation of cellulose acetate.

Zein as a structural protein in gluten-free systems: an overview

Xinrui Zhang et al.

Summary: Zein, a type of protein found in maize endosperm, can create a gluten-like viscoelastic network in gluten-free foods. Understanding the fundamental properties of zein network is crucial for improving the quality of gluten-free products.

Carbohydrate-hydroxymethylfurfural-amine adhesives: Chemorheological analysis and rheokinetic study

Catherine Thoma et al.

Summary: This study analyzed the curing process of carbohydrate-amine adhesives with and without 5-hydroxymethylfurfural (HMF), a key reactant in biomass-derived adhesives. The addition of HMF was found to reduce the activation energy of the curing reaction, thus increasing reactivity. Rheological measurements provided insights into the structure formation of the cured polymer and showed a deviation from homogeneous curing in the viscosity profile.
