Revealing dynamic changes of the volatile profile of food samples using PTR-MS

Tomasz Majchrzak et al.

Summary: Volatile compounds emitted from food can provide valuable information about food properties, and a better understanding of transformations during food processing can optimize production and increase product desirability and wholesomeness. Real-time monitoring of these transformations using techniques like PTR-MS can enhance quality control methods for food processing.

On-line assessment of oil quality during deep frying using an electronic nose and proton transfer reaction mass spectrometry

Tomasz Majchrzak et al.

Summary: A novel method for quality assessment of oil for deep frying was described, based on analysis of frying fumes using an electronic nose. The method allows for quick quality scoring without interrupting the frying process. Real-time monitoring of volatile organic compounds in the frying fumes revealed possible indicators for oil quality.

Release Kinetics Studies of Early-Stage Volatile Secondary Oxidation Products of Rapeseed Oil Emitted during the Deep-Frying Process

Tomasz Majchrzak et al.

Summary: The research used a proton transfer reaction mass spectrometer to track the real-time emissions of volatile secondary oxidation products released from rapeseed oil during the deep-frying of potato cubes. It was found that a sudden increase in volatile organic compound emissions occurred when the oil temperature dropped by more than 20 degrees Celsius.

Volatile organic compound emissions during HOMEChem

Caleb Arata et al.

Summary: The study found that emissions from the building and its contents are the main sources of indoor VOC emissions, with large emissions of acetic acid, methanol, and formic acid. Cooking emissions exceed cleaning emissions and are mainly dominated by ethanol. Bleach cleaning generates high emissions of chlorinated compounds, while natural product cleaning emits primarily terpenoids.

Exposure characteristics and risk assessment of VOCs from Chinese residential cooking

Fengju Lu et al.

Summary: The study found that different cooking methods in residential kitchens release differing concentrations of TVOC, with exposure intensity decreasing in the respiratory zone. Strong ventilation can reduce TVOC exposure. The predominant contaminants in Chinese residential cooking fumes are aldehydes, while commercial restaurants' emissions contain more aromatic hydrocarbons.

Mass spectral characterization of secondary organic aerosol from urban cooking and vehicular sources

Wenfei Zhu et al.

Summary: The study conducted experiments on secondary organic aerosol (SOA) formation from urban cooking and vehicular sources using a high-resolution time-of-flight aerosol mass spectrometer. Results showed that cooking styles had a greater impact on aged COA mass spectra than oxidation conditions, while oxidation conditions significantly affected aged HOA spectra more than vehicle operating conditions. Mass spectra similarity analysis and positive matrix factorization were used to establish the POA and SOA mass spectra of these sources, and the improved ME-2 model better quantified the contribution of POA and SOA from cooking and vehicular sources compared to traditional ambient PMF results. This work established the vehicle and cooking SOA source profiles for the first time and can be further used in OA source apportionment in the ambient atmosphere.
