Structural changes in local Thai beef during sous-vide cooking

Summary: The study demonstrates that sous-vide cooking of Thai beef at different temperatures and times results in microstructural changes in muscle fibers, with the cooking temperature affecting the variation in cross-sectional myofibrillar mass area. Hypercontracted fibers are formed under all temperature-time combinations, and are associated with structural evolution in the mitochondria.

Shockwave processing of beef brisket in conjunction with sous vide cooking: Effects on protein structural characteristics and muscle microstructure

Summary: The study demonstrated that shockwave processing, with or without sous vide cooking, can induce structural changes in meat proteins and muscle structures, affecting the thermal stability and organization of proteins. It resulted in disorganization of the sarcomere structure, modification of the protein secondary structure, and increased muscle fiber coagulation and denaturation in cooked meat. These changes have the potential to improve the organoleptic quality of tough meat cuts.
