Exploring a degradation strategy for biogenic amines based on the Cantonese soy sauce production method

Summary: The study revealed that Bacillus isolated from the moromi had the strongest ability to produce BA during the middle phase of the process. The contents of BAs involved in histamine were significantly reduced by inoculating Zygosaccharomyces rouxii QH-17 and Tetragenococcus halophilus CGMCC3792. A biodisturbance strategy based on the functional microbiota was identified as an effective approach to decrease BAs in the soy sauce process.

HS-SPME/GC?MS volatile fraction determination and chemometrics for the discrimination of typical Italian Pecorino cheeses

Summary: In this study, the volatile components of three typical Italian Pecorino cheeses were analyzed using headspace solid-phase microextraction coupled with gas chromatography-mass spectrometry. Linear Discriminant Analysis and Partial Least Squares-Discriminant Analysis were effective in accurately classifying the samples based on their volatile composition data, providing a powerful tool for discriminating between Pecorino cheeses. Despite the differences in production cycles and geographical locations, the methods showed high calibration accuracy and good predictive ability.
