Improved viability of Lactobacillus plantarum embedded in whey protein concentrate/pullulan/trehalose hydrogel during freeze drying

Haiyue Sun et al.

Summary: The study demonstrated that the addition of trehalose (TRE) can improve the viability of encapsulated L. plantarum, with optimal conditions being 5.0% TRE concentration and a 1:4 ratio. TRE reduced the storage modulus of the hydrogel and weakened interactions between proteins and polysaccharides, while also showing excellent water holding capacity.

Effects of different dietary polyphenols on conformational changes and functional properties of protein-polyphenol covalent complexes

Xiangju Liu et al.

Summary: Conjugates of whey protein isolate (WPI) and four polyphenols were prepared through free-radical grafting in this study. The conjugation process significantly enhanced the antioxidant properties and thermal stabilities of polyphenols, while reducing the surface hydrophobicity of the complexes.

WPI Gel Microstructure and Mechanical Behaviour and Their Influence on the Rate of In Vitro Digestion

Stephen Homer et al.

Summary: The study found a strong correlation between the elasticity of the initial gel and the gel particle size following simulated oral processing, significantly affecting the rate of digestion in the gastric phase. A weaker correlation was also found between the pH of the gels and the extent of gastric digestion.

Heat-induced gel formation by whey protein isolate- Lycium barbarum polysaccharides at varying pHs

Zhendong He et al.

Summary: The study showed that composite gels with 0.1% Lycium barbarum polysaccharides exhibited the greatest functional value, while gels with 1% LBP had higher porosity. Whey protein formed different types of gels at varying pH levels, but showed no significant difference in hydration properties.

Astaxanthin-loaded emulsion gels stabilized by Maillard reaction products of whey protein and flaxseed gum: Physicochemical characterization and in vitro digestibility

Zhao Zhang et al.

Summary: The Maillard reaction products (MRPs) of whey protein and flaxseed gum prepared by ultrasonic assisted wet-heating have enhanced functional properties with higher grafting degree and expanded structures. These MRPs improve the water holding capacity, encapsulation efficiency, and stability of emulsion gels, leading to increased bioaccessibility of loaded astaxanthin. This highlights the potential of MRPs in enhancing protein functionality and serving as delivery carriers for bioactive compounds in the food industry.

Breakdown mechanisms of whey protein gels during dynamic in vitro gastric digestion

Yamile A. Mennah-Govela et al.

Summary: This study investigated the influence of particle geometry on pH, buffering capacity, and breakdown mechanisms during gastric digestion. It was found that spheres primarily undergo erosion during digestion, while cubes experience initial fragmentation followed by erosion. Additionally, particle geometry affected initial buffering capacity of gels and pepsin activity in the liquid phase of digesta.
