Study on the enhancement effect and mechanism of heat-induced gel strength of duck egg white by emulsified lipids

Ruiling Li et al.

Summary: This study investigated the effects and mechanisms of different types and levels of emulsified lipids on the physicochemical properties of heat-induced duck egg white gels. The results showed that emulsified lard and butter enhanced the hydrophobic interactions and crosslinking within the gels, resulting in higher hardness and water holding capacity compared to emulsified sunflower oil.

Effects of flexibility and surface hydrophobicity on emulsifying properties: Ultrasound-treated soybean protein isolate

Shizhang Yan et al.

Summary: The study investigated the effects of ultrasound treatment on the flexibility, structure, and emulsification properties of soybean protein isolate (SPI). It was found that SPI exhibited optimal emulsification performance at 400 W ultrasound power, with a significant correlation between flexibility and emulsification performance. These findings suggest that the conformational flexibility of SPI, rather than its surface hydrophobicity, plays a key role in determining its emulsification properties.

Influence of particle size on the properties of rice flour and quality of gluten-free rice bread

Wanyu Qin et al.

Summary: The study showed that with the reduction of particle size, the hydration and pasting viscosity of rice flour increased while the gelatinization temperature decreased slightly. Rice bread made from larger particle size resulted in lower volume, rougher crumb structure and harder texture compared to those made from smaller particle size.

Interfacial film formation and film stability of high hydrostatic pressure-treated β-lactoglobulin

Helena Kieserling et al.

Summary: This study found that the structural flexibility of pressure-treated beta-lactoglobulin at the oil/water-interface favored fast interfacial protein film formation and stabilized the film against shear deformation due to strong intermolecular interactions. However, the film showed lower stability against high dilatational deformation, indicating a slow migration towards unoccupied interfacial area. This research contributes to understanding the mechanical protein film stability and colloidal stability of emulsions based on the protein structure at the oil/water-interface.

Hong Fan et al.

Summary: The study investigated the effects of different temperatures on the physicochemical and molecular properties of alkali-induced egg white gel (EWG). Results showed significant changes in pH, hardness, and rheological properties of EWG as temperature increased, impacting protein structure and intermolecular interactions. Overall, the findings provide insights into the destruction of EWG under high temperature conditions and its correlation with molecular interactions.

Effect of sodium tripolyphosphate on the interaction and aggregation behavior of ovalbumin-lysozyme complex

Haobo Jin et al.

Summary: The study investigated the mechanism by which sodium tripolyphosphate affected the aggregation behavior of ovalbumin-lysozyme complexes. The results indicated that phosphorylation increased turbidity, weakened structure unfolding and stretching, and resulted in a broader network structure of the complex.

Preparation and structural characteristics of composite alginate/casein emulsion gels: A microscopy and rheology study

Peiyuan Li et al.

Summary: The study found that oil droplets were always located in the casein-dominant regions regardless of the polymer types used for preparing emulsions. As Alg concentration increased, the gelation time of composite emulsion gels shortened, and the incorporation of oil droplets also affected the phase separation rate and extent between Alg and caseins.

Preparation of dynamic covalently crosslinking keratin hydrogels based on thiol/disulfide bonds exchange strategy

Mianhong Chen et al.

Summary: The DCC keratin hydrogels extracted by reducing agents show characteristics such as injectability, self-healing, self-adapting, biocompatibility, and redox-responsive capacity. The extracted type II neutral/alkali keratin plays a critical role in imparting the keratin hydrogels with reversible behaviors. Using a simple thioldisulfide bonds exchange strategy to prepare DCC keratin hydrogels avoids the extra introduction of chemical crosslinking agents.

Physicochemical properties and digestive kinetics of whey protein gels filled with potato and whey protein mixture emulsified oil droplets: effect of protein ratios

Chao Mao et al.

Summary: In this study, the effect of emulsified droplets covered by mixtures of potato protein and whey protein on the properties of emulsion-filled whey protein gels was investigated. Increasing the potato protein ratio in the emulsified droplets improved the mechanical properties and microstructural characteristics of the gels, while delaying the release rate of amino groups and fatty acids during digestion. Additionally, the presence of NaCl enhanced the gel properties and digestion of the gels.
