Flavonoid enrichment of fresh-cut apple through osmotic dehydration-assisted impregnation

Summary: The study explored the feasibility of incorporating flavonoids and low-calorie sugar substitutes into fresh-cut apples through osmotic dehydration. It found that temperature and molecular weight of solutes significantly affected the mass transfer kinetics and quality of the final product. The effect of whey protein-puerarin interactions on the formation and performance of protein hydrogels

Summary: The study investigates the impact of protein-polyphenol interactions on the formation of heat-set protein hydrogels. It was found that hydrogen bonding was the main interaction between whey protein isolate (WPI) and puerarin (PUE). By altering the polyphenol concentration, the rheological properties of the hydrogels could be modulated, with increases in complex shear modulus, hardness, and resilience observed with higher PUE levels. Wild pink bayberry fruit: the effect of in vitro gastrointestinal digestion on phytochemical profiles, and antioxidant and antiproliferative activities

Summary: This study evaluated the phytochemical profiles, antioxidant, and antiproliferative activities of wild pink bayberry fruit after in vitro digestion. Compared with chemical extraction, digestion resulted in a low release of total phenolics and anthocyanins but higher flavonol contents. Although the antioxidant activity was low in the digesta samples, there was an increase in cellular uptake rate during digestion.
