Optimization of rheological characteristics of bread dough supplemented with defatted wheat germ

Summary: The objective of this study was to optimize the formulation of bread dough with defatted wheat germ (DWG) by investigating the influence of various factors on dough rheological properties. The results showed that the addition of gluten had a positive effect on water absorption and softening of the dough, while the content of DWG had a pronounced negative effect on dough resistance. The combination of DWG with smaller particle size and gluten addition increased both resistance and extensibility of the dough.

The results showed that MTI effectively reduced the corrosion rates of carbon steel 1018 under static and dynamic conditions, and its inhibition performance was influenced by MTI concentration, solution temperature, and rotational speed.
