Variation in milk fat globule size and composition: A source of bioactives for human health

Summary: Milk fat globules (MFGs) are composed of a triacylglycerol core surrounded by a triple membrane structure. The milk fat globule membrane (MFGM) contains complex lipids and proteins with various functions. Different species of milk have variations in MFG size and MFGM composition, which may impact human health. Methods for purifying and enriching bioactive components in the MFGM are not yet established for human consumption. Selecting specific MFG size fractions or breeds may be a convenient way to meet human dietary and health requirements.

Summary: Feeding mice an experimental infant milk formula with a lipid structure similar to human milk in early life temporarily decreased body weight and fat gain later in life compared to mice fed a control infant milk formula. The study found that the early-life diet affected the absorption and postabsorptive trafficking of dietary lipids in later life, leading to changes in tissue concentrations of absorbed lipids, particularly in heart, liver, and muscle. This altered lipid trafficking may contribute to the observed lower body weight and fat accumulation upon a high-fat diet challenge in adulthood.

Summary: Different particle sizes and sources of droplets covered with milk fat globule membrane phospholipids were studied using an infant digestion model, revealing differences in particle size, aggregation, and free fatty acid release during digestion. The release rate of free fatty acids was significantly higher in MPLs and HM compared to IF, with MPLs and HM also showing higher content of long-chain polyunsaturated fatty acids and lower content of saturated fatty acids compared to IF.
