Crystallization properties of acetylated β-(1-4)-d-xylan

Summary: The study investigated the crystallization properties of acetylated xylans, revealing a significant impact of acetylation on the crystalline characteristics of xylans. Ethanol-precipitated acetylated xylans exhibited xylan diacetate crystal peaks at DS=2, while water-precipitated acetylated xylans showed the appearance of xylan diacetate crystal peaks at DS=1.96, indicating an abrupt formation of xylan diacetate crystal with changes in DS.

Summary: This study focuses on the production of xylan hydrate nanocrystals (XNCs) and their application in forming Pickering emulsions. XNCs with uniform size were successfully produced by mild ultrasonic treatment, showing great potential in industrial emulsification with emulsifying properties comparable to synthetic emulsifiers and better than some other common biopolymer nanocrystals.
