Consumer Trust in Food and the Food System: A Critical Review

Wen Wu et al.

Summary: Increased focus on food safety and quality is changing global food purchasing decisions. Consumers rely on trusted cues and information beyond visual and brand-related cues to verify the quality and credence attributes of the food they seek. Trust in food and the food system is established through individual food products and the actors of the food system, including food packaging labels, certifications, country or region of origin, food traceability, and assurances from producers, processors, retailers, government agencies, third-party institutions, advocacy groups, and the mass media.

Understanding Risk Perception toward Food Safety in Street Food: The Relationships among Service Quality, Values, and Repurchase Intention

Kyung Hwa Seo et al.

Summary: This study investigates the relationship between service quality dimensions, utilitarian value, and hedonic value of street food, finding that the five dimensions of service quality have positive impacts on utilitarian and hedonic values, and that perceived value (utilitarian, hedonic) influences repurchase intention. Additionally, the level of risk perception towards food safety affects the influence of food quality on utilitarian value, depending on consumer awareness levels.
