Increase consumers' willingness to pay a premium for organic food in restaurants: Explore the role of comparative advertising

Values, Motives, and Organic Food Consumption in China: A Moderating Role of Perceived Uncertainty

Summary: This research aims to understand the significance of altruistic and egoistic values in shaping consumers' motivations and intentions to purchase organic foods. By conducting face-to-face surveys, a total of 1,067 responses were collected from Chinese consumers. Two-step structural equation modeling (SEM) was used for data analysis, including measurement and structural models. The findings reveal that both altruistic and egoistic values influence the intention to purchase organic foods through the mediation of motives. Specifically, altruistic value affects environmental concern (EC) while egoistic value affects health concern (HC). Moreover, perceived uncertainty plays a negative moderating role in the relationship between consumer HC and organic purchase intention, and a positive moderating role in the relationship between consumer EC and organic purchase intention. Implications and suggestions are also discussed in the study.
