Soybean allergy: characteristics, mechanisms, detection and its reduction through novel food processing techniques

Jin Wang et al.

Summary: This review provides a detailed description of the pathogenesis, clinical characteristics, and diagnostic methods of soybean allergy, and summarizes the structures of major soybean allergens. The double-blind, placebo-controlled food challenge is recognized as the gold standard for diagnosing soybean allergy. Additionally, novel food processing techniques such as ultrasound and cold-plasma treatment show potential in reducing soybean allergenicity.

The effect of a Halal label and label size on purchasing intent for non-Muslim consumers

Widya Satya Nugraha et al.

Summary: This study examined the impact of Halal labeling on the purchasing intent of non-Muslim consumers in Taiwan. Results showed that the majority of non-Muslim Taiwanese consumers are willing to buy or try to buy Halal labeled meat products. The size of the Halal label does not deter consumers from purchasing, as long as the meat is kept fresh with cold storage techniques.

Multiplex PCR and 12S rRNA gene sequencing for detection of meat adulteration: A case study in the Egyptian markets

Asmaa Galal-Khallaf

Summary: DNA-based multiplex PCR combined with sequencing has been proven to be an accurate, fast, and cost-effective method for meat authentication. The study showed the presence of poultry contamination in processed beef products, while all frozen beef liver samples were identified as cattle species. It is recommended to use multiplex PCR and PCR-sequencing for quality control in routine analysis of meat products.

Identification of eleven meat species in foodstuff by a hexaplex real-time PCR with melting curve analysis

Jinchun Li et al.

Summary: The study developed a hexaplex real-time PCR assay using melting curve analysis to identify eleven meat species simultaneously, showing good specificity of primers and detection limits of 0.01-0.1 ng DNA and 0.1-1% meat mixture. The method can accurately identify different meat species, indicating great application potential.

Quantitative determination of mutton adulteration with single-copy nuclear genes by real-time PCR

Tingting Li et al.

Summary: Mitochondrial genes are commonly used for PCR-based meat adulteration authentication, but variations in gene copies can lead to quantification errors. This study developed a quantitative method using single-copy nuclear genes to accurately identify mutton adulteration, achieving high recovery rates for simulated mutton-pork, mutton-chicken, and mutton-duck samples.

Improved triplex real-time PCR with endogenous control for synchronous identification of DNA from chicken, duck, and goose meat

Guo-Qiang Liu et al.

Summary: An improved triplex real-time PCR approach was developed to simultaneously identify chicken, duck, and goose DNA in meat with high specificity and sensitivity. The method included an endogenous control to avoid false negatives and was able to simultaneously identify DNA from two distinct origins.
