Physicochemical properties and adaptability of amine-producing Enterobacteriaceae isolated from traditional Chinese fermented fish (Suan yu)

Nitrite, biogenic amines and volatile N-nitrosamines in commercial Chinese traditional fermented fish products

Summary: The safety of Chinese traditional fermented fish products (CTFPs) available on the Chinese market was examined, with nitrite, nitrate, biogenic amines (BAs) and volatile N-nitrosamines (VNAs) content investigated in 33 commercial CTFPs from different provinces. The study found that most CTFPs had acceptable levels of nitrite and nitrate, but some samples exceeded the limits for biogenic amines and volatile N-nitrosamines.

Community structure of yeast in fermented soy sauce and screening of functional yeast with potential to enhance the soy sauce flavor

Genomic features, aroma profiles, and probiotic potential of the Debaryomyces hansenii species complex strains isolated from Korean soybean fermented food

Summary: This study conducted genomic analysis and physiological characterization of two Debaryomyces spp. yeast isolates obtained from Korean traditional fermented soy sauce. The results showed that these yeast isolates have halotolerance and improved growth in the presence of high concentrations of salt. They also have the ability to produce various flavor compounds and exhibit high bioconversion activity. Furthermore, they showed immunomodulatory activity and were confirmed to be safe.

Abating biogenic amines and improving the flavor profile of Cantonese soy sauce via co-culturing Tetragenococcus halophilus and Zygosaccharomyces rouxii

Inhibition of biogenic amines accumulation during Yucha fermentation by autochthonous Lactobacillus plantarum strains

Exploring the bacterial community for starters in traditional high-salt fermented Chinese fish (Suanyu)
