Research trends in the oenological and viticulture sectors

A. Cimini et al.

Summary: This study analyzed the scientific evolution of the oenological and viticulture sectors by examining peer-reviewed articles retrieved from the Scopus database. Italy, Spain, and France were the main publishing nations, with a focus on antioxidant activity of anthocyanidin and polyphenols, genetics of grapevine and yeast, and analytical methods for volatile, nutritional, and anti-nuisance compounds. Unlike the beer sector, wine research might have overlooked the negative implications of wine consumption on human health and the potential for low-alcohol or alcohol-free alternatives.

Influence of wine traits and context on liking, intention to consume, wine-evoked emotions and perceived sensory sensations

Fiorella Sinesio et al.

Summary: The study found that liking and intention to consume Chianti wine did not vary significantly among different test settings, suggesting that testing conditions have low relevance compared to the wine samples. However, the context did influence emotions and sensory terms, with lower scores found in home use test environment and longer testing time resulting in better product separation in the HUT context. Pleasure of Chianti wine was associated with positive emotions like pleasant, peaceful, joyful, amusing, and the sensory attribute sweet, while unpleasantness was linked to negative emotions like aggressive, disgusting, overwhelming, and the sensory terms acid, dry, astringent. Level of arousal was positively associated with euphoric, passionate, keen emotions and correlated well with spicy and persistent sensory characteristics.

Comparing classical descriptive analysis with modified descriptive analysis, modified rate-all-that-apply, and modified check-all-that-apply

Misa Nishida et al.

Summary: The study compares the effectiveness of modified sensory methods to traditional descriptive analysis, finding that modified rate-all-that-apply can have a similar discrimination ability as descriptive analysis with subtly different sample sets. The results suggest that the modified rate-all-that-apply technique could be a suitable substitute for descriptive analysis in complex samples, especially when sensory attributes and reference standards are available for training.

The Italian Wine Sector: Evolution, Structure, Competitiveness and Future Challenges of an Enduring Leader

Eugenio Pomarici et al.

Summary: The Italian wine supply chain has performed well in recent decades despite being fragmented in terms of products, prices and consumption context, and hindered by the organization that hinders the full exploitation of economies of scale. The success of the sector may be linked to the Porter Diamond Model and the district nature of a large part of the sector.
