Enhancing the bioaccessibility of lycopene from tomato processing byproducts via supercritical carbon dioxide extraction

Summary: Tomato peel and seed, usually treated as waste in the tomato processing industry, contain high-value lycopene. This study investigated the extraction of lycopene from tomato peel and seed using supercritical carbon dioxide (SC-CO2) and hexane, and examined the bioaccessibility of the extracted oleoresins. The results showed that SC-CO2 extraction had a higher content of (Z)-lycopene compared to hexane extraction. Separating the insoluble fraction from the oleoresins further increased the (Z)-lycopene content. The bioaccessibility of total-lycopene was also significantly improved through SC-CO2 extraction due to the higher content of (Z)-lycopene and the uniform distribution of lycopene in the oleoresins. SC-CO2 extraction is not only an environmentally friendly method for extracting bioactive compounds but also has the potential to enhance their health benefits.
