Postharvest UV radiation enhanced biosynthesis of flavonoids and carotenes in bell peppers

Noelia Castillejo et al.

Summary: The study showed that a postharvest 6 kJ/m2 UV-C treatment could be a great tool for increasing the accumulation of carotenoids and flavonoids in red bell peppers, with no negative effects on physicochemical quality attributes. UV treatments induced carotenoid and flavonoid accumulation in peppers, particularly after 14 days at 7 degrees Celsius.UVB, UVC, and UVB + C were all effective elicitors in increasing the content of carotenoids and flavonoids in the red bell peppers.

Influence of a heat-shock pre-treatment on wound-induced phenolic biosynthesis as an alternative strategy towards fresh-cut carrot processing

Carla Alegria et al.

Summary: In fresh-cut vegetables, combined stresses can lead to different responses compared to individual stresses, with wound-induced phenolic biosynthesis being influenced by peel removal and shredding in carrots. Heat application, although causing a delay in phenolic content increase, ultimately leads to higher phenolic accumulation in shredded carrots after 10 days. However, the decrease in peroxidase activity may impact quality degradation during storage.

Fresh-Cut Vegetables Processing: Environmental Sustainability and Food Safety Issues in a Comprehensive Perspective

Antonio Raffo et al.

Summary: This review comprehensively discusses the various aspects of food safety and environmental impact related to the processing of fresh-cut vegetables. It mentions the advantages and disadvantages of mainstream disinfection strategies and alternative treatments. It also highlights the limitations in applying these strategies to organic produce processing and examines the specific environmental and food safety issues in the organic sector. The review proposes innovative conceptual tools to address these issues and suggests a comprehensive and multidisciplinary approach towards a safer and environmentally sustainable production of fresh-cut products.

Quality Changes of Fresh-Cut Watermelon During Storage as Affected by Cut Intensity and UV-C Pre-treatment

Francisco Artes-Hernandez et al.

Summary: UV-C pre-treatment had a significant impact on the quality of fresh-cut watermelon cylinders during storage, prolonging shelf life, particularly in larger diameter cylinders, and showing better antimicrobial effects against enterobacteria. However, UV-C treatments led to reductions in total phenolic content and total antioxidant capacity.

Heat Treatment and Wounding as Abiotic Stresses to Enhance the Bioactive Composition of Pineapple By-Products

Diana I. Santos et al.

Summary: Abiotic stresses such as heat treatment and wounding applied to pineapple by-products can induce the accumulation of new compounds and increase their value. The study found that applying wounding and heat treatment to pineapple by-products can increase the total phenolic content and antioxidant activity, but the effects vary depending on the specific by-product.
