Biotechnological re-cycling of apple by-products: A reservoir model to produce a dietary supplement fortified with biogenic phenolic compounds

Summary: This study demonstrated the benefits of recycling apple by-products through fermentation, resulting in products with higher dietary fiber and antioxidants. The combination of Lactobacillus and Saccharomyces had the greatest impact on the bioavailability of phenolic compounds. The fermented apple by-products showed potential health-promoting effects by counteracting inflammation and oxidative stress in Caco-2 cells.
