The Quantification of Fatty Acids, Color, and Textural Properties of Locally Produced Bakery Margarine

Summary: This study analyzed bakery margarine samples and found that long-chain saturated fatty acids were the dominant component. The study also revealed that bakery margarine has the characteristics of a hard plastic material, and the color parameter is positively correlated with polyunsaturated fatty acids.

Summary: Ultrasonic treatment had little effect on the color parameters, carotenoid content, particle size distribution, and polydispersity of pumpkin juice. However, the L*, a*, b*, and C* values decreased significantly during storage, resulting in a significant increase in Delta E. Enzyme activity and rheological properties increased significantly in the later stages of storage. The microstructure of all samples did not change significantly during storage.

Optimization of accelerated solvent extraction of paprika oleoresin and its effect on capsaicinoid and carotenoid composition
