Emerging mycotoxins in infant and children foods: A review

Soraia V. M. de Sa et al.

Summary: Proper nutrition is crucial for children's healthy development. However, some foods can contain natural toxins such as mycotoxins produced by fungi. In addition to well-regulated mycotoxins, there is a group of emerging mycotoxins about which less is known, but they are prevalent in most food, especially cereals and cereal-based products.

Protective Effect of Organic Selenium on Oxidative Damage and Inflammatory Reaction of Rabbit Kidney Induced by T-2 Toxin

Yumei Liu et al.

Summary: T-2 toxin, a common contaminant in food, induced kidney injury in rabbits, characterized by increased oxidative stress and inflammation. However, pretreatment with a low dose of SeMet effectively reversed these effects, suggesting a potential protective role of selenium against T-2 toxin-induced kidney damage.

Comparative sensitivity of proliferative and differentiated intestinal epithelial cells to the food contaminant, deoxynivalenol

Su Luo et al.

Summary: This study demonstrated that proliferative intestinal epithelial cells are more susceptible to the mycotoxin deoxynivalenol (DON) compared to differentiated cells. DON was also found to delay the differentiation process in the intestinal epithelium. The differential gene expression analysis revealed the involvement of various pathways in the response to DON and the differentiation process.

Review of the beneficial and anti-nutritional qualities of phytic acid, and procedures for removing it from food products

Ehsan Feizollahi et al.

Summary: Phytic acid, a primary phosphorus reserve in cereals and legumes, is considered an anti-nutritional factor due to its ability to bind minerals, proteins, and starch, limiting their bioavailability. However, it also offers health benefits such as reducing cancer risk and supporting heart health. Various processing techniques can be used to reduce phytic acid levels in foods, mitigating its anti-nutritional effects and creating potential for novel applications.

Aflatoxin B1 and Aflatoxin M1 Induce Compromised Intestinal Integrity through Clathrin-Mediated Endocytosis

Yanan Gao et al.

Summary: This study found that exposure to both AFB1 and AFM1 has a significant impact on intestinal integrity, affecting serum biochemical parameters, villus height/crypt depth ratio, and distribution of tight junction proteins in mice. In vitro experiments showed that AFB1 and AFM1 individually and in combination can decrease cell viability and increase paracellular permeability in a dose-dependent manner. Additionally, AFM1 exacerbated the compromised intestinal barrier induced by AFB1, with evidence suggesting that clathrin-mediated endocytosis may play a role in this process. The study also identified synergistic and additive effects between AFB1 and AFM1, indicating a potential negative impact on human health.

Natural Occurrence of Deoxynivalenol in Cereal-Based Baby Foods for Infants from Western Poland

Kinga Mruczyk et al.

Summary: The study detected DON in 9.09% of infant food samples, with the highest concentration found in wheat-based products. Despite no high levels of DON or estimated daily intake being observed, it is recommended to conduct a risk assessment based on monitoring results to minimize potential harm in infant and young children's food.
