Contribution of cereals and cows' milk consumption to the exposure to mycotoxins: a study with Portuguese children

Summary: The study evaluated the risk of exposure to mycotoxins in a Portuguese population under 17 years old through the consumption of contaminated foods. While the observed levels were below the maximum levels for most mycotoxins, there was a risk in deoxynivalenol exposure for certain age groups. Further tight control and re-evaluation of maximum levels of these mycotoxins are recommended to mitigate potential adverse effects.

There has been a decrease in both the concentration and prevalence of DON over the past 15 years. Children below 3 years old have a higher exposure to DON, with infants and children showing 175% and 119% of the tolerable daily intake respectively.

Deoxynivalenol: Toxicology, Degradation by Bacteria, and Phylogenetic Analysis

Mitigatory methods, such as biodegradation, have been developed to address this issue. This review provides an overview of DON's occurrence, regulation, metabolism, and toxicology in recent publications, focusing on animal production. It also explores the enzymatic routes described for DON's degradation by microorganisms and their phylogenetic relationship.
