Summary: Lactic acid bacteria, especially Lactococcus lactis, are widely used in the food industry for the control and protection of fermented food manufacturing processes. Recent studies have shown that certain strains of lactic acid bacteria form complex biofilms with heterogeneous and aerial structures. The presence of pili in these strains affects the biomechanical properties of the biofilms, with non-piliated strains being smoother and stiffer compared to piliated strains. Additionally, the role of pili in biofilm cohesiveness was demonstrated through the adhesion of bacteria to the biofilm surface.

This platform demonstrates the potential to induce stem cell differentiation and promote neural cell growth in a synthetic, reproducible 3D microenvironment mimicking the native ECM.
