Drying Behavior and Curcuminoids Changes in Turmeric Slices during Drying under Simulated Solar Radiation as Influenced by Different Transparent Cover Materials

Nilobon Komonsing et al.

Summary: This study examined the effects of different drying conditions on dried turmeric slices. The results showed that higher temperatures increased drying rate and improved color and curcuminoid preservation. 70 degrees C under polycarbonate cover was identified as the optimal drying condition.

The integration of MS-based metabolomics and multivariate data analysis allows for improved quality assessment of Zingiber officinale Roscoe

Mohamed A. Salem et al.

Summary: This study established a non-targeted metabolomics approach for discrimination between fresh ginger samples from different producing countries, showing clustering of Asian specimens and higher contents of bioactive metabolites in Peruvian ginger. Chemical markers, including [6]-gingerol and [6]-shogaol, were identified to discriminate between fresh and dried samples, while the biosynthetic pathway of gingerols and shogaols was confirmed. The proposed approach can be used for quality assessment of ginger and other medicinal plants.
