Characterization of the effect of different sugar on volatile flavor compounds of dried fish floss using e-nose combined with HS-SPME/GC-MS

Summary: The aim of this study was to evaluate the volatile compounds of dried fish floss made with different sugars. The results showed that there were significant differences in flavor among the fish floss samples. The study also confirmed that the Maillard reaction and lipid oxidation played a key role in flavor formation. These findings can provide guidance for the production and flavor improvement of fish floss.
