Effects of particle sizes on structural and physicochemical properties of pomelo peel powders

Summary: The study investigated the structural and physicochemical properties of pomelo peel powders with different particle sizes. It found that the desirable properties of pomelo peel powders can be achieved by appropriate particle size design. The results may be helpful for the utilization of pomelo peels as a raw food material.

Summary: Different drying methods, including tray drying, microwave, and freeze drying, were used to dry banana peels, with carbonation and ultrasonication as the best pre-treatment. The study found that the water sorption surface area increased after pre-treatments, and Peleg model fitted best to experimental data for sorption studies. Additionally, the Gordon-Taylor model was able to predict the water plasticizing effect on glass transition temperature.
