Type and Amount of Legume Protein Concentrate Influencing the Technological, Nutritional, and Sensorial Properties of Wheat Bread

Summary: Plant protein concentrates, such as pea and soy protein concentrates, were used to substitute wheat flour in bread production to increase protein intake. The results showed that protein levels were correlated with water absorption and volume of the bread, while different types of protein concentrates influenced factors like texture and color differently. Soy breads were found to have a softer crumb compared to pea breads, and overall acceptability did not differ significantly from the control group.

Physicochemical and Nutritional Evaluation of Bread Incorporated with Ayocote Bean (Phaseolus coccineus) and Black Bean (Phaseolus vulgaris)

Summary: The study examined the effects of substituting wheat flour with ayocote bean or black bean flours in bread, finding increases in protein, ash, and crude fiber content, as well as a decrease in in vitro protein digestibility. Thermal analysis indicated reduced retrogradation with the addition of these legumes. Specific volume of the bread was decreased with higher percentage substitutions of black bean and ayocote, while nutrient content saw an increase without affecting sensorial properties around 10-20% substitution.

Nutritional, Antinutritional Compounds and Nutraceutical Significance of Native Bean Species (Phaseolus spp.) of Mexican Cultivars

Summary: This study analyzed the nutraceutical potential, antinutritional content, antioxidant activity, and physicochemical characteristics of 38 native bean accessions from South Pacific Mexico. Different species of beans varied in size, nutritional composition, and free amino acid content. The main free amino acids differed among the three bean species, serving as markers for species classification. Furthermore, the study suggested that certain accessions of P. lunatus and P. coccineus could be promoted for the development of functional foods.
