Characterization of Six Lactones in Cheddar Cheese and Their Sensory Interactions Studied by Odor Activity Values and Feller's Additive Model

Six aroma-active lactones were identified and their odor thresholds were determined, showing complex interactions among 15 binary mixtures of these lactones, including additive, synergistic, or masking effects. The study also found that delta-dodecalactone and gamma-dodecalactone had promotive and inhibitory effects on the expression of lactone fruity aroma, respectively.
